December 4th- Day 1

Cannabis Infused Sugar Cookies with

Cannabis Infused Royal Icing

Recipe Yields about 3 Dozen 2.5 Inch Cookies

Prep time: 4-6 hours

375 degrees F. Bake about 7-9 minutes.


There are so many designs you can do with the royal icing! Let your imagination run wild! There is tons of tutorials on youtube if you need more ideas, or want more precise instructions for a specific design!

*There is about 1.5 Teaspoons cannabis butter per cookie- so depending on how potent your butter is the main determining factor in how potent each cookie will be. You can put 1.5 tsp. of cannabutter in some coffee or on some toast prior, to get an idea how one cookie will effect you (just for a reference). You can adjust the cannabutter : regular butter ration if you want the cookies to be more (add more cannabutter in place of regular butter) or less (add less cannabutter and replace with regular butter) potent.



3 cups flour

1 tsp. baking powder

1/4 tsp. salt

1/2 cup cannabis infused butter (coconut oil is ok also! See Cannabinoid Infusion for cannabutter recipe and info.)

1/2 cup butter (or coconut oil)

1 cup sugar

1 egg, beaten

1 tbsp. milk (you can also use juice to give it a slight fruity flavor)

1 tsp. vanilla (if desired)


In mixer cream butters with sugar until smooth. Add in beaten egg and milk, then cream until fluffy. In separate bowl, combine flour, salt, baking powder- mix. Add flour mix to creamed butter mixture. Combine. Scrap sides of bowl, add vanilla, if desired- mix until dough forms a ball. Separate into 2 rounds, cover tightly with plastic wrap and refrigerate for 2 hours or overnight.


Roll each dough round out with powdered sugar to help prevent sticking. About 1/4 -inch thick. Cut with desired cookie cutter shapes. I used a mason jar dipped in powdered sugar to cut my cookie rounds. Place cookies onto ungreased cookie sheet and bake at 375 degrees F for about 9 minutes, turning pans at half way for even baking. When you smell the cookies and the edges begin to turn golden brown, your cookies are baked! Remove pan and let cool a few minutes before using a spatula to move your cookies to a cooling rack to finish cooling.


*Make sure your oven temperature is accurate! Mine is about 50degrees too hot, so I usually bake my cookies at about 300degrees F. to prevent them from getting too dark too quickly!


*As your cookies cool, prepare the royal icing. Recipe below.


Once, your cookies are completely cool, you can decorate however you desire! A few ideas, tips and tricks can be found below also!



These are the colors I chose. I did 7 thinner flood icings in various colors. A thick dam icing in a pink/purple/orange combo. Also, 1 medium thickness flood icing (for detailing) in a dark reddish/brown color.


Cannabis Infused Royal Icing

3 medium egg white (pasteurized if you wish)

about 4 cups of powdered sugar

1 tsp. cream of tartar

1 tbsp. cannabis infused vodka or clear high proof alcohol of choice for thinning flood icing (recipe below)- use water to thin if you choose not to use the infused alcohol, or if you use a tincture

*you can also use a store bought tincture- just ensure whatever you use is well incorporated (follow suggest serving amounts on bottle of store bought tinctures for dosing)

1 drop of terpenes (if desired)

food color gels of choice


Beat all ingredients (except infused alcohol and color gels) until still peaks form. Separate into bowls for desired colors to be added. For damming(outline) reserve 1/4 cup icing left thick. For flooding(fill) thin remaining icing slightly with a 1 tbsp. cannabis infused vodka (thin further if needed). Separate flood icing into various colors if desired. Fill squeeze bottles or piping bags and begin decorating!


*Outline with dam icing, then fill with flooding icing. Use tooth pick to pop any air bubbles and to help move icing. As icing sets it will smooth and harden. Place in front of a fan to set faster. Let cookies set overnight before enjoying!


*Using a toothpick and swipe away from the color to create "pointed" edges. Or swipe in toward the center to pull outer colors in. Be careful not to overfill your cookie with flood icing- it can run off the edge once it fills up past the dam icing. If your dam icing is too close to the edge, it will allow the flood icing to seep over. Try to keep the damn icing just about 1/8 inch from the cookies edge.





Quick Wash Cannabis Infused Vodka1/2 cup vodka ice cold from freezer

7 grams decarboxylated cannabis flower, broken up into small pieces and frozen

cheese cloth

2 pint size mason jars with lid and ring

funnel

coffee filter

rubber bands


In 1-pint mason jar, combine frozen, decarboxylated cannabis and ice cold vodka. Tighten lid/ring and shake vigorously for about 2 minutes. Immediately, strain plant matter out of vodka using multiple layers of cheese cloth, held over funnel with rubber band. Squeeze any remaining alcohol into mason jar, from cheesecloth, then discard cheesecloth. *You may rewash the material if desire- just be sure to keep the washes separate (they will be different grades).


After you have completely strained cannabis from alcohol, place lid and ring on jar and freeze for 48 hours to winterize. After 48 hours, slowly strain alcohol through coffee filter (keeping as cold as possible) to remove lipids.


Once, you have strained completely, your cannabis infused alcohol is complete. It takes a very little amount for effects. Store in freezer for best quality.
