December 4: 20 Days of Cannabis Infused Cookie Recipes Day 4- Mini Christmas Tree Cookies

Updated: Jan 23, 2019

These cute little Christmas trees require a cookie press for the soft, sticky dough! They are delicate, light and delicious once baked; you wont be able to eat just one!

Light, cute, cannabis infused Christmas Tree spritz cookies! This is the same recipe my grandma and mom both used- well, minus the cannabis!

Cannabis Infused Christmas Tree Spritz Cookies

Bake 375degrees F for 7-8 minutes

Yields about 75 cookies ( about 6 dozen)

*There is a little less than half a teaspoon cannabutter per cookie! So, you can eat a few! ;) *5 cookies is approximately 1.5 teaspoons cannabutter total fyi

1/2 cup cannabis infused butter

1/2 cup butter

3/4 cup sugar

1 egg

2 1/4 cups flour

1/2 teaspoon baking powder

Dash of salt

1 Teaspoon Almond Extract

Green food dye to tint

Sprinkle of choice (I used different colored balls for "ornaments", a star topper and sugar sprinkles) for decorating

You will also need any kind of cookie press with the tree disc (see picture below)

Cream cannabutter, adding sugar gradually. Add egg, beat well. Add dry ingredients, incorporate some, then add desired tint and almond extract. Mix until tint is completely incorporated, spoon into cookie press. Form cookies on ungreased sheet pans. Decorate and then bake at 375 degrees F. (I bake mine at 300 since my oven bakes so hot.) for 7-8 minutes, turning at 4 minutes. Cool for a minute before moving to cooling rack to finish. Eat!

*Tips: prime the cookie press- twist until dough is peaking out of tree (see picture below). Place on sheet pan, twist handle until you see dough begin to bulge around press. Twist handle in opposite direction while pulling the press away from the sheet pan- leaving a cute tree behind. These cookies do not rise or spread much at all, so as close as you can get the press to each cookie the better (more cookies per sheet pan!) Keep a close eye on these, they can burn quick! I recommend washing the sheet pans between batch due to the sugar burnt to the pan (makes it impossible to get your cookies off the pan clean!)
