Cannabis Infused Cookies with Peppermint Butter Icing
Recipe Yields about 3 Dozen 2.5 Inch Cookies
Prep time: 3 hours with refrigeration
375 degrees F. Bake about 7-9 minutes. (I bake at 300 since my oven bakes so hot!)
*these contain about 1.5 teaspoons cannabutter per cookie, not including icing if you choose to infuse that also, which is less than half a teaspoon of cannabutter per cookie, approximately.
3 cups flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup cannabis infused butter (coconut oil is ok also!)
1/2 cup butter (or coconut oil)
1 cup sugar
1 egg, beaten
1 tbsp. milk
1 tsp. vanilla extract
In mixer cream butters with sugar until smooth. Add in beaten egg and milk, then cream until fluffy. In separate bowl, combine flour, salt, baking powder- mix. Add flour mix to creamed butter mixture. Combine. Scrap sides of bowl, add vanilla- mix until dough forms a ball. Separate into 2 rounds, cover tightly with plastic wrap and refrigerate for 2 hours or overnight.
Roll each dough round out with powdered sugar to help prevent sticking. About 1/4 -inch thick. Cut with desired cookie cutter shapes. I used a mason jar dipped in powdered sugar to cut my cookie rounds. Place cookies onto ungreased cookie sheet and bake at 375 degrees F for about 9 minutes, turning pans at half way for even baking. When you smell the cookies and the edges begin to turn golden brown, your cookies are baked! Remove pan and let cool a few minutes before using a spatula to move your cookies to a cooling rack to finish cooling.
*As your cookies cool, prepare the Peppermint Icing. Recipe below.
Once, your cookies are completely cool, you can top with peppermint icing and crushed candy canes and then let the icing set until stiff to the touch.
Cannabis Infused Peppermint Butter Icing 2 medium egg whites (pasteurized if you wish) About 3 cups of powdered sugar 1 tsp. cream of tartar 1/4 cup cannabis infused butter or coconut oil. *you can omit the cannabis infusion 1 Teaspoon Peppermint Extract A couple 'drops' red or pink food dye- I prefer the gel
1/2 cup crushed candy cane bites (crush in food processor or blender)
Beat egg whites, cream of tartar and gradually adding powdered sugar, until still peaks form. Whip in the cannabis infused butter, peppermint extract and dye until well incorporated. Fold in 1/8 cup crushed peppermint candy cane bites. Scoop some of the icing onto each cooled cookie and spread to edges. Sprinkle with remaining peppermint candy cane bites before each cookie begins to set. These cookies should set overnight for icing to stiffen. You can place under a fan to quicken the process. Enjoy!
