Recipe Yields about 3 Dozen 3.5 Inch Cookies
Prep time: 3 hours with refrigeration
375 degrees F. Bake about 7-9 minutes. (I bake at 300 since my oven bakes so hot!)
*these contain about 1.5 teaspoons cannabutter per cookie
3 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cannabis infused butter (coconut oil is ok also!)
1/2 cup butter (or coconut oil)
1 cup sugar 1 egg, beaten
1 tablespoon milk
1 teaspoon vanilla extract
Hard candy of choice, crushed fine- I used Lifesavers, about 10-15 of each of the 5 colors
In mixer cream butters with sugar. Add in beaten egg and milk, then cream until fluffy. In separate bowl, combine flour, salt, baking powder- mix. Add flour mix to creamed butter mixture. Combine. Scrap sides of bowl, add vanilla- mix until dough forms a ball. Separate into 2 rounds, cover tightly with plastic wrap and refrigerate for 2 hours or overnight.
While dough chills, separately crush each hard candy color into a fine dust using a food processor or blender. Set aside in separate bowls for cookie decorating.
Roll each dough round out with powdered sugar to help prevent sticking. About 1/4 -inch thick. Cut with 3.5 inch cutter or shape of choice- remember you need to be able to cut a shape from the center of the cookie while still leaving enough cookie for integrity. I used a coffee mug, shot glass and star cookie cutter dipped in powdered sugar to cut my cookies. Place cookies onto paper lined cookie sheet. Using a small spoon or gloved fingers- sprinkle the crushed hard candy into the centers of your cookies trying not to cover the cookie dough itself. Fill the centers to the top of the cookies.
Bake at 375 degrees F for about 9 minutes, turning pans at 4 minutes for even baking. When you smell the cookies and the edges begin to turn golden brown, your cookies are baked! Remove pan and let cool completely on paper lined pan on top of a cooling rack. Enjoy!
