December 4: 20 Days of Cannabis Infused Cookie Recipes Day18- Slice and Bake Stars

Updated: Dec 21, 2018

A recipe and method for cannabis infused slice and bake sugar cookies! I made stars, you can do a cannabis leaf or pretty much any shape you desire!

You can use any cookie cutter shape you like. Smaller cutters work better because then there isnt as much center cookie to cover.

Bake at 375degrees F for about 8-12 minutes depending on cookie size

*Cookie yield and potency depends on diameter of cookie. I got 20 about 4.5 inch cookies from the recipe- this means each cookie contained a little more than one teaspoon of cannabutter

1 tsp. baking powder

1/4 tsp. salt

1/2 cup cannabis infused butter

1/2 cup butter

1/2 cup sugar

1/2 cup powdered sugar

1 egg, beaten

1 tbsp. milk

1 tsp. vanilla (if desired)

flavorings of choice (I did strawberry and lemon since it is what I had on hand)

food colors of choice

2 egg whites, with a splash of water for "gluing" dough

In mixer cream butters with sugars until smooth. Add in beaten egg and milk, then cream until fluffy. In separate bowl, combine flour, salt, baking powder- mix. Add flour mix to creamed butter mixture. Combine. Scrap sides of bowl, add vanilla, if desired- mix until dough forms a ball.

Take one third of dough and tint and flavor with desired color/flavor for center of cookie. Tint /flavor the other 2/3 of dough desired color/flavor for outside of cookie. Wrap each separately with plastic wrap and refrigerate 2 hours or overnight. On silicon mat or on stick surface- roll 1/3 chunk of dough and cut desired shape for center. As you cut out your shape, use the egg white wash to glue each cookie together, stacking them in 2 stacks about 8 high. Refrigerate for 30 minutes. Glue stacks together and refrigerate again for 30 minutes.

Meanwhile, using the remaining dough, form 5 strips to surround you center. I did triangles to fit into my stars, use whatever shape will ensure even and complete coverage of you center cookie shape. After 30 minutes, remove center dough shape form fridge and begin laying cookie outside around it, using sufficient egg white wash to glue. Smooth sides with wash and hands forming log shape. Wrap tightly in plastic and refrigerate at least 2 hours.

Slice evenly with a very sharp knife.

Place cookies onto ungreased, lined cookie sheet and bake at 375 degrees F for about 9 minutes, turning pans at half way for even baking. When you smell the cookies and the edges begin to turn golden brown, your cookies are baked! Remove pan and let cool a few minutes before using a spatula to move your cookies to a cooling rack to finish cooling.

*Make sure your oven temperature is accurate! Mine is about 50degrees too hot, so I usually bake my cookies at about 300degrees F. to prevent them from getting too dark too quickly!
