December 4: 20 Days of Cannabis Infused Cookie Recipes Day12- Gluten Free Cherry Almond Cookies

Almonds, honey, cherries and cannabis infused coconut oil makes for a semi-health friendly cookie option!



Yields about 4.5 dozen

Bake 300degrees F. 7 minutes


*each cookie contains about half a teaspoon of cannabutter.


1/2 cup cannabis infused coconut oil

1/2 cup coconut oil

about 1/4 cup honey plus 1 tablespoon for drizzle

1 egg

3 cups almond flour

1/2 teaspoon baking powder

dash salt

1 teaspoon almond extract

2 tablespoon toasted almond slices

28 cherries-pitted and cut in half (fresh or frozen)

Cookie press or a piping bag with desired tip


Cream coconut oils and 1/4 cup honey. Beat in egg. Combine almond flour, baking powder and salt in separate bowl. Add flour mix to wet ingredients. Combine well. Fill cookie press with "poinsettia" disc -or- fill piping bag with desired tip inserted. Form cookies onto ungreased, unlined cookie sheets about 1 inch apart. *If you use a piping bag- simply pipe a small circle on your cookie sheet ensuring each center is closed for your cherry to sit on top.



Place half a cherry in the center of each cookie and bake at 300degrees F. for 7 minutes, turning at 3 or 4 minutes for even baking. While cookies bake, I toasted my almonds in a pan on the stove top. Cool cookies on sheet pan for a minute before drizzling with honey and sprinkling with bits of toasted almonds. Cool for another minute or 2 on the pans before transferring cookies to cooling rack to finish. Enjoy!
